Spiced Pomegranate & Pistachio Bircher Muesli

I am not sure where this week has gone. A few days away at the weekend seems to have completely thrown me and I am still catching up, hence the lateness of this post. This year's annual British Breakfast Week runs from 24th January until 30th January, highlighting the importance of a good breakfast. It is also aims to encourage people to think about where their food comes from and the arable farmers that grow the wheat, barley and oats for our cereals. As someone who rarely misses breakfast, whether it is a quick slice of toast, a bowl of fruit, porridge or something more leisurely at the weekend, I am always surprised at how many people go without it.

I thought I would share one of my favourite midweek breakfast recipes, a spiced apple, pomegranate and pistachio bircher muesli. I often make this when I tire of porridge, but still want something substantial to see me through until lunch. The oat base is prepared the night before and can be topped with any seasonal fruit, but I love the bright cheery hue of pomegranate and pistachio. I freshly squeeze my own apple juice as I prefer the flavour of traditional varieties like Egremont Russet, but you can use any good quality shop bought apple juice.

Spiced Pomegranate & Pistachio Bircher Muesli

Ingredients

  • 100g jumbo porridge oats

  • 150ml fresh apple juice

  • pinch of cinnamon

  • pinch of nutmeg

  • 1 small apple, cored and grated

  • 25ml - 50ml milk

    Topping

  • 2 tablespoons yoghurt

  • 50g pistachios, chopped

  • 2-3 tablespoons pomegranate seeds

Instructions

  1. Mix the oats, apple juice and spices in a bowl, cover and refrigerate overnight.

  2. Stir in enough milk to loosen the oats, add the freshly grated apple and divide between two bowls.

  3. Top with yoghurt, pomegranate seeds and pistachios and serve.
